These are very light and fluffy yeast donuts, just like the real thing!  Since this is a yeast recipe it requires time for the dough to rise so it is best to prepare the day before.  If you can't wait and need donuts *now* please see our cake donuts recipe.

Donuts:

2-1/4 tsp active yeast (1 packet)
¾ cup warm water (100 - 110° F)
1/3 cup granulated sugar + 1 tsp to activate yeast
½ tsp salt
¼ cup butter = 4 TBSP (soften in microwave)
1 egg
1 egg yolk
1 tsp vanilla extract
3 cups all-purpose flour

  1. In a mixing bowl combine yeast packet with ¾ cup warm water (100-110° F) and 1 tsp sugar. Stir and let sit 10 minutes until foamy.
  2. Using a stand mixer with a dough hook or large mixing spoon combine the yeast mixture with all of the other ingredients and blended well. Scrape down the sides to incorporate all of the flour.  The dough will be very sticky.
  3. Move the dough to a lightly oiled bowl, toss to coat, and cover tightly with plastic wrap. Let stand 2 hours.  This is the 1st
  4. Remove the plastic wrap briefly and push down on the dough ball until it collapses. Place the bowl in the refrigerator overnight (or for at least 8 hours) for the 2nd
  5. Remove the bowl from the refrigerator, remove plastic wrap, and push the dough ball down to release any air. Allow it to warm up for 30-60 minutes; this is the 3rd and last rise.
  6. Heat 1 cup of oil in your Microfryer to 325° Using a cookie dough scoop, carefully drop 2 balls of dough into the Microfryer and start your 2-1/2 minute timer.  Rotate the donut holes occasionally for even cooking. TIP: submerge your cookie dough scoop in ice water as this will help to prevent sticking.
  7. Remove and place cooked donut holes on cooling rack or paper towel lined plate. Allow the donuts to cool 5-10 minutes prior to glazing.
  8. Dip each donut holes into the glaze mixture, drain well and place on plate. Alternatively you can brush the glaze onto the donuts. The glaze will set in about 20 minutes.

Glaze:

2 cups confectioners’ (powdered) sugar
3 TBSP + 1 tsp warm water
2 tsp vanilla

  1. Place sugar in a small mixing bowl
  2. Add the vanilla extract and water
  3. Mix with a whisk until smooth and any lumps are dissolved
  4. Pour into a tall glass for coating donuts
  5. Dip each donut hole into the glazing, allow to drain and place on a plate. Glazing will set in about 20 minutes.

NOTE: If dipping donuts this recipe will only coat 1 dozen donut holes.  Alternatively you can glaze all 2-1/2 dozen donuts by brushing on the glaze.

Yields 2-1/2 dozen donut holes.
